Auntie DD Healthy Muffin Mix

Auntie DD Healthy Muffin Mix

Mix and set aside:
1-cup flour
1-cup quick oats
½ cup wheat germ
½ cup oat bran
½ cup wheat bran
¾ cup brown sugar
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon (optional)
½ tsp nutmeg (optional)
½ tsp salt
½ cup sunflower seeds
½ cup walnuts or slivered almonds
1-cup dates or cranberries or raisins

Mix together:
2 eggs
½ cup light olive oil (extra virgin tastes too strong in this recipe)
1-cup milk (I use skim or Soya)
2 grated carrots
Add wet mixture to dry mixture and mix thoroughly.
Scope into greased muffin pan and bake at 350 for approximately 25-30 min – test for doneness around 20 min.

Excellent for freezing!
